Vegan breakfast

Vegan Breakfast

So I got this wild hair to make a breakfast with all faux meats to show you that you can still (if you absolutely have to) enjoy bacon, eggs and sausage. I had this recipe for a vegan scramble with kalamata olives (the best olives on the planet) and thought I would try it out. I succeeded -I got a breakfast that not only looked like your traditional meat lovers breakfast – it actually tasted darn close…but with all the grossness. I used Tofu for the eggs with turmeric and Smart Bacon and Smart Sausage. Enjoy!

  • Breakfast: Bagel with a little earth balance and and an apple
  • Lunch: Flax bread, Tofurkey slices (3), organic mixed greens, cucumber, Veganaise and Grey Poupon and a banana

Tofurkey Sandwich

  • Breakfast: Pomegranate cereal, extra whole flax, vanilla soy milk, apple.
  • Lunch: Spiced tofu sandwich, lettuce, tomato, pepperoncini’s, pickles, veganaise, whole wheat bun.
  • Dinner: Salad with lettuce, tomatoes, avocado, cucumber and kalamata olives with soy ginger vinaigrette

I am pretty excited about this post. I think what I want to do with this blog is take a picture of everything I eat (well try to) for an undisclosed amount of time as part of a food journal but also to help my mom know what she should/can eat as she continues on her vegan diet.

While I did not eat this tonite – this picture is of my favorite made up vegan dish. I call them Vegan Eggplant Stacks. (Eggplant, tomato sauce, chopped garlic, pesto – no cheese, basil and vegan mozzarella. This was a hit at my hubby’s 45th birthday and it was a hit with me my second attempt. Plus it looks so good and dishes out on a plate nicely.
